This is a wonderful dressing for salads. There is no hint of garlic in the taste after it is put together. 1 large bulb of garlic 1C ex virgin olive oil 1/2C red wine vinegar 2t lemon juice 2T honey 1t salt 1/2 t pepper any dried herbs you want to add (optional) Do not use fresh herbs, they will shorten the life of the dressing. Roast whole bulb of garlic (do not peal) @350 for about 40 minutes - let cool until workable Combine cooled garlic and all ingredients except olive oil in blender. Blend until smooth. Drizzle in the oil a little at a time. If too thick, add a little more olive oil. recipe produces a very creamy semi-sweet dressing. There is little or no garlic taste if the bulbs are roasted properly.
